Southwestern Lasagna main meal
What you need:
1 1/2 lbs ground beef 1 1/2 tsp. cumin 1 Tbs. chili powder 1/4 tsp. garlic powder 1/4 tsp. red pepper 1 tsp. salt 1 tsp. black pepper 1 (16 oz) can tomatoes, chopped
10-12 corn tortillas 2 c small curd cottage cheese, drained 1 c shredded Monterey Jack cheese with peppers 1 egg 1/2 c shredded Cheddar cheese 2 c shredded lettuce 1/2 c shopped tomatoes
3 green onions, chopped 1/4 c sliced black olives
What you do:
Brown the ground beef in a skillet, stirring until crumbly; drain. Stir in the next 7 ingredients. Cook over low heat until heated through.
Line a 9x13 inch baking dish with 1/2 of the tortillas. Spoon the ground beef over the tortillas. Top with remaining tortillas. Pour a mixture of the cottage, Monterey Jack cheese
and egg over the tortillas. Bake at 350 degrees for 30 minutes. Sprinkle rows of remaining ingredients diagonally across the center. from the kitchen of Girlposse.com reader Linda...
